当店では、アラビアン、イタリアンの料理人として15年以上の経験を持つシェフが、食材にこだわり、自分の目で仕入れ、一品一品心をこめてつくらせていただいております。ご提供させていただいている肉類はすべて「ハラル」（イスラム教の律法に則り、イスラム教の作法に従って処理されている食品）です。彩り豊かな絶品のアラブ料理を目と舌で味わいながら、極上のひとときをお楽しみいただけます。
『AL MINA』オーナー・シェフであり、AMG JAPAN合同会社CEOを務めるシャディ・バシイが初めて日本を訪れたのは2004年。以来、東京で本場アラブ・パレスチナの味を忠実に再現したレストランを探すが、残念ながら見つけることはできませんでした。このことがきっかけとなり、美味しいアラブ料理を日本の皆様に味わっていただきたいという大きな夢が芽生え、2010年に千代田区神田に自身初のレストランをオープンするに至りました。

The idea to create Al Mina arose when owner and lead chef Shahdi Bashiyi (CEO of AMG Japan) realized, after arriving to Tokyo in 2004, that there were no restaurants in the metropolis that could truly offer the unique taste of his homeland. After numerous unsuccessful searches to find true Arabian cuisine, Shahdi finally began operating his very own bona fide Middle-Eastern eatery in Kanda, Chiyoda-ku, in 2010.
